Matcha Cold Foam

A delicious topping to any drink, hot or iced, Matcha Cold Foam is simple and quick to make. Just matcha powder, heavy whipping cream (regular or non-dairy), plus your favorite sweetener.
Cold foam is popular at coffeehouses, and there's a reason why. It is so yummy! Normally, it consists of heavy whipping cream, a touch of milk, some vanilla extract, and a sweetener. Whipped together until it thickens into a plush and luxurious cream, the cold foam is then poured or spooned over hot coffee, iced coffee or tea drinks, and shakes.

For this matcha-flavored version of cold foam, it's best to use a ceremonial-grade matcha powder. I've tried a few kinds and found there really is a difference. Lower grades are a dull green and produce a slightly bitter tea. A higher-grade powder is pricier, yes, but it is also a vibrant, beautiful green and tastes slightly grassy, earthy, and nutty. There is nothing like it!
What else to do with this delicious cold foam? It is great spooned over any kind of milk, including my homemade Date Milk. But I especially love it with this easy-to-make Korean Banana Milk!

Lessons Learned
- It is absolutely worth the extra five seconds to sift the matcha powder through a fine mesh strainer. Doing this gets rid of any lumps and ensures it mixes well with water.
- Be sure to use warm or room temp water. Hot boiling water scorches matcha and causes it to taste bitter. I learned this the hard way!
- Liquid sweeteners dissolve more easily and don't leave behind any gritty texture. My homemade simple syrup is perfect for this and can be made sugar-free!
