Pisco Sour

Pisco Sour mocktail.

This Pisco Sour mocktail is a deliciously tart, frothy, and refreshing drink that mimics the taste of the traditional cocktail but without the booze! Made from a handful of ingredients including white grape juice, fresh lime juice, simple syrup, and bitters. So easy and so pretty!

Pisco is a type of grape brandy made in Peru and is the base of the cocktail that was invented about 100 years ago in Lima. Bartender and saloon owner Victor Morris modeled the drink after a whiskey sour but with local ingredients: pisco, lime juice, and sugar. Eventually, the egg white and bitters were added, giving the drink a frothy head and velvety texture.

While I enjoy a traditional Pisco Sour occasionally, I do like to adapt my drinkies into mocktails so I can enjoy them more often. Some subs I made:

  • Instead of pisco (a grape brandy), I'm using an unsweetened white grape juice. It brings the clean fruit notes of white grape that are in the distilled spirit.
  • Instead of sugar, I've substituted my homemade simple syrup. I keep the sugar-free version on hand all the time and enjoy it in cocktails, mocktails, and coffee.

Other swaps to consider:

  • If you just can't/won't do the raw egg white, no worries. Substitute an equal amount of aquafaba (liquid from a can of chickpeas) instead, around 2 Tablespoons.
  • If you want to keep this completely alcohol free (Angostura bitters add a trace amount of alcohol), use a brand of bitters that is zero proof such as All the Bitter.

Achieve that frothy top by shaking all the ingredients first without ice (called a "dry shake"). Once it is foamy, then add the ice and shake again to make the drink cold.

This is a perfect accompaniment to another Peruvian staple, Lomo Saltado (Peruvian Beef Stir Fry)!

  • 2 ounces unsweetened white grape juice
  • 1 ounce fresh lime juice
  • ¾ ounce simple syrup (reg or sugar free)
  • 1 fresh egg white (or 2 Tablespoons aquafaba)
  • Angostura bitters

Instructions

  1. Tip the white grape juice, lime juice, simple syrup, and egg white into a cocktail shaker. Do not add ice yet! Place the top on the shaker and shake for 20 seconds until combined and a frothy white foam is created.
  2. Add 3 to 4 ice cubes, replace the top, and shake again for another 20 seconds until cold.
  3. Strain into cocktail glass. Spoon on any extra foam from the shaker.
  4. Garnish with a few drops of bitters and enjoy.
