Dalgona Coffee

Dalgona coffee.

Korean whipped coffee fluff, aka Dalgona Coffee, is a delicious way to enjoy your favorite brew. Made from just instant coffee and hot water (add sweetener if you like), this comes together in minutes. Enjoy it spooned over warm or iced drinks!

Dalgona is a Korean candy that is very similar to honeycomb candy. We used to buy it at a local farmers' market and love the crunchy texture and toffee-like taste. Other names for it include sponge candy, cinder toffee, and seafoam.

So what does that have to do with this coffee?

Whipped or beaten coffee is popular in many parts of the world, but this particular version of became super popular in 2020 during the pandemic lockdown. Koreans named it "dalgona" because it has a similar look and taste to the popular street candy.

This treat is super easy to make and needs just two ingredients, three if you add a sweetener. It can even be made with decaf instant coffee (I won't tell if you don't tell).

Lessons Learned

  • You don't have to use a sweetener if you don't want to! This recipe absolutely works with just instant coffee and hot water.
  • Spoon this over any milk you like. I think it is especially good with my homemade Date Milk or Korean Banana Milk!
  • Wondering if you can make a big batch of this and freeze it? Yup, you can! I have a recipe for Frozen Dalgona Coffee that makes 5 heavenly cups. Keep it in the freezer and use it all week.

Ingredients

Units Scale
  • 1 ½ Tablespoons instant coffee crystals (like Nescafe dark roast)
  • 1 ½ Tablespoons hot water
  • 1 Tablespoon sweetener, any kind (optional)

To serve as an iced drink:

  • Ice cubes
  • 1 cup milk, any kind (I like it with my homemade Date Milk!)

To serve as a hot drink:

  • 1 cup milk, any kind, heated

Instructions

  1. Add the instant coffee crystals, hot water, and sweetener (if using) to a tall mug or shaker. Whisk with a handheld frother for 4 to 5 minutes. The mixture will thicken and change color from very dark to medium tan as it aerates and gets fluffy.
  2. Spoon over cold or warm milk.
