Mango Salsa

Mango salsa.

Sweet, fresh, and just the right amount of spicy, Mango Salsa is a bright fruit salsa made with fresh mango, tomato, onion, and three kinds of peppers. This savory salsa is a nice addition to any taco bar or chips-and-salsa situation.

Most people are familiar with savory Mexican-style red or green salsas (such as Salsa Verde). They typically include tomato or tomatillo, onion, peppers, cilantro, and lime juice, among other ingredients.

Spoon them over tacos, tortilla chips, or grilled meats and veggies. I especially love this salsa with a Baja Seafood Bake that features three kinds of seafood.

But fruit salsas bring some sweetness to the picture! They can contain a variety of fruits, but are especially good with stone fruit, like in my Peach Salsa, or tropical fruit like in my Pineapple Salsa.

Lessons Learned

  • Choose mangoes that are fragrant, ripe, and yield to slight pressure at the base of the stem. Hard, unripe mangoes won't be as sweet.
  • You get to control the amount of heat! My middle-aged tummy says one jalapeno is enough spice, but yours might tell you otherwise.
  • Fresh cilantro is a must here, in my opinion. If you are one of those who doesn't like the taste of it, sub in another fresh herb like oregano, flat-leaf parsley, or even mint. Learn how to keep cut herbs fresh in my YouTube video.

Ingredients

  • 1 mango
  • ½ red onion
  • 1 tomato
  • ½ red bell pepper
  • ½ poblano (or other mild green pepper)
  • 1 or 2 jalapenos
  • 1 cup cilantro
  • juice of 1 lime
  • Salt to taste

Instructions

  1. Peel and dice the mango into small dice. Add to a medium bowl.
  2. Dice the red onion and tomato. Remove stems and seeds from bell pepper, poblano, and jalapenos. Chop into small pieces and add everything to the bowl.
  3. Finely chop the cilantro and add to the bowl along with lime juice. Stir everything together and taste. Add ½ teaspoon salt if you feel it needs it.
