Kale Salad with Stone Fruits and Pecan

Ingredients

Salad:
  • 5 cups baby kale
  • 1 cup cherries, pitted and halved
  • 1 cup peaches, pitted and sliced
  • 1/2 cup pecans, lightly toasted
  • 1/2 cup feta or goat cheese, crumbled
Vinaigrette:
  • 3 Tbsp balsamic vinegar
  • 3 Tbsp olive oil
  • 1 Tbsp agave or honey
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper

Instructions

  1. Place kale on a large serving platter or shallow bowl. Arrange the cherries and peaches over the kale. Sprinkle on the pecans and feta.
  2. Pour the vinegar, oil, agave, salt, and pepper into a screw-top jar. Cover and shake until combined. Pour the dressing over the salad before serving.
