Salad
- 5 cups arugula
- 1 cup mint leaves
- 1 cup cucumber, thinly sliced
- 1 cup blackberries
- 1/2 cup blueberries
- 1 cup diced avocado
- 1/4 cup crumbled goat cheese
- 1/4 cup sliced almonds, toasted
- 1 Tbsp finely sliced mint leaves
- 2 Tbsp lime juice
- 1 tsp lime zest
- 1 tsp Dijon mustard
- 1 Tbsp maple syrup
- 1/3 cup olive oil
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
Instructions
- Arrange the arugula on a large serving platter or on individual plates. Top with mint leaves, cucumber, blackberries, and blueberries. Add the avocado, goat cheese, and sliced almonds.
- Combine the vinaigrette ingredients in a small mason jar. Screw on the top and shake the ingredients together until well combined. Pour over the salad and serve.
