Ingredients

Salad
  • 5 cups arugula
  • 1 cup mint leaves
  • 1 cup cucumber, thinly sliced
  • 1 cup blackberries
  • 1/2 cup blueberries
  • 1 cup diced avocado
  • 1/4 cup crumbled goat cheese
  • 1/4 cup sliced almonds, toasted
Vinaigrette
  • 1 Tbsp finely sliced mint leaves
  • 2 Tbsp lime juice
  • 1 tsp lime zest
  • 1 tsp Dijon mustard
  • 1 Tbsp maple syrup
  • 1/3 cup olive oil
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper

Instructions

  1. Arrange the arugula on a large serving platter or on individual plates. Top with mint leaves, cucumber, blackberries, and blueberries. Add the avocado, goat cheese, and sliced almonds.
  2. Combine the vinaigrette ingredients in a small mason jar. Screw on the top and shake the ingredients together until well combined. Pour over the salad and serve.
